Apricot-Walnut Crumb Bars


Today I tried the the Apricot-Pecan Crumb Bars from this months issues of Sunset Magazine. I changed it up a little by adding walnuts instead of pecans. Walnuts are more affordable and just as good.

Ingredients
    2 cups flour
    1 cup cold unsalted butter, cubed
    1/2 cup granulated sugar
    1/4 teaspoon salt
    1/4 tsp. cinnamon
    1/2 cup walnut halves

Preparation
  1. Preheat oven to 325°. Put flour, butter, granulated sugar, and salt in the bowl of a stand mixer. Mix on low speed until blended, then increase to medium and mix until dough is no longer crumbly and just comes together.

  2. Reserving 1 cup dough.

  3. Press remaining dough into the bottom of a greased 9- by 9-in. baking pan. Spread 1 cup apricot preserves over dough.

  4. In a bowl, combine reserved dough with 1/4 tsp. cinnamon and 1/2 cup walnut halves (that I have crushed to make them more bite size) and crumble mixture over preserves.

  5. Bake until golden brown and bubbling, about 50 minutes. Let cool completely, then cut into 16 squares.





These turned out more than wonderful!!! A little to messy for candy stocking stuffers got my work but a great sweet snack with coffee.
